Mexican Chicken Soup

Packed with protein from the chicken, legumes and quinoa, this wholesome chunky winter soup is a perfect mid-week dinner. Serve with a dollop of sour cream, corn chips or crusty toasted bread! 


Serves: 3-4 |  Cook: 30 mins  | Difficulty: Easy


INGREDIENTS

2 tosp olive oil

2 garlic cloves, minced

1 medium brown onion, diced

2 tsp smoked paprika

1 tsp cumin

2 tbsp chipotle sauce

1 can diced tomatoes

1 tbsp tomato paste

1 cup brown or green lentils

1 whole red capsicum, chopped

3-4 chicken thigh or breast, boneless

4 cups chicken stock

½ cup tricolour quinoa, thoroughly rinsed 1 can black beans

1 can corn kernels 

Handful of fresh coriander

Sour cream to serve

Lime wedges to serve

METHOD 

  1. Start off by heating olive oil in a large heavy based pot or saucepan over a medium heat. Add onion and garlic and saute for 2 minutes until soft and translucent. Add smoked paprika, cumin, dice tomatoes, tomato paste, chipotle sauce, capsicum and lentils and stir to combine.
  2. Add chicken and chicken stock and bring to a boil, reduce to a simmer and cover to cook for 20 minutes. Halfway through add quinoa, beans and corn.
  3. Carefully remove chicken and using two forks shred into small pieces. Return to pot and stir to combine.
  4. Serve with fresh coriander, a dollop of sour cream and a squeeze of fresh lime!

For customers purchasing a Pre-order item with other in-stock items, your order will only be dispatched once all items are in-stock. Which means you will have to wait until the Pre-order item arrives before your in-stock items are shipped.


If you wish to have your in-stock items shipped ahead of a Pre-order item, please place separate orders.

What happens if the release date changes?

All of our dispatch dates are approximate only. Your Pre-order item may arrive slightly early or late.

If your Pre-order item is more than 10 business days late to be dispatched and you would like to cancel your item, please reach out to hello@pinchyproducts.com.au to organise a full refund.
